Crab-Stuffed Filet Mignon with Whiskey Peppercorn Sauce     I often partially cook my filets in the pan, and finish them on the grill. This recipe works well with roasted red potatoes and a nice glass of wine.

Ingredients

CRAB STUFFING:
2 tablespoons olive oil
1 teaspoon minced onion
1 teaspoon minced green onion
1 teaspoon minced garlic
1 teaspoon minced celery
1 teaspoon minced green bell pepper
2 tablespoons shrimp stock or water
1 (6 ounce) can crab meat, drained
2 tablespoons bread crumbs
1 teaspoon Cajun seasoning

PEPPERCORN SAUCE
1 1/4 cups beef broth
1 teaspoon cracked black pepper
1 fluid ounce whiskey
1 cup heavy cream

STEAKS:
4 (6 ounce) filet mignon steaks
4 slices bacon, cooked lightly
salt and cracked black pepper to taste
1 tablespoon olive oil
1 clove garlic, minced
1 teaspoon minced shallot
1 cup crimini mushrooms, sliced
1 fluid ounce whiskey
1 teaspoon Dijon mustard

Directions

Make Crab Stuffing: Heat 2 tablespoons olive oil in a large skillet. Saute onion, green onion, garlic, celery, and green pepper until tender. Stir in shrimp stock, crab meat, bread crumbs, and Cajun seasoning. Remove from heat, and set aside.
Prepare Peppercorn Sauce: In a small saucepan over medium heat, combine beef broth and cracked black pepper. Simmer until reduced to 1 cup, stirring frequently. Add1 ounce whiskey and 1 cup cream. Continue simmering until reduced to 1 cup. Remove from heat, and set aside.
Prepare Steaks: Slice a pocket into the side of each steak, and stuff generously with crab stuffing. Wrap bacon around side, and secure with toothpicks. Season to taste with salt and pepper; set aside. Heat olive oil in a large cast iron skillet over medium heat. Saute garlic and shallot for 1 minute. Stir in mushrooms, and saute until tender. Remove mushroom mixture, and set aside.
Place steaks in skillet, and cook to desired doneness. Remove from skillet, and keep warm. Deglaze skillet with 1 ounce whiskey. Reduce heat, and stir in peppercorn sauce and Dijon mustard. Add mushroom mixture, and reduce sauce until thickened. Remove toothpicks and bacon from steaks, and arrange steaks on a plate. Top with sauce.

My favorite is - Stuffed Strawberries with brandy sauce

First dip the Strawberries in a good chocolate like Scharffenberger. Let harden, then us a small knife to carve out the white pith that's in the center of the berry.
Chop some hazelnuts and pceans, saute them in butter for a few minutes to soften and get some color, then add some Grand Marnier or tripplesec, little more butter and some brown sugar, want the final results to be a crumbly mixture, IMPORTANT, let this get fully cool.
Stuff the hollowed out strawberries with the above, arrange on a small plate and drizzle with a basic hard/brandy sauce…

Ingredients for brandy sauce

1/2 cup unsalted butter, softened
1 cup sifted confectioners' sugar
1 tablespoon orange zest
1 tablespoon orange juice
2 tablespoon brandy

It's not complicated at all and you can make a few dozen in about 20 min.

Guys will fall in love with this one and your sure to get big kiss out of the deal too.

Do you think a Skype room would work? You can have up to 250 members per room and there's video.  I know this isn't the best solution but it's free. The down side is you do have to install their software if you can call that a problem.  Maybe we could have a tool or a flag that would let people know it's ok to Skype them or a list people can sign up for and then they can be invited to the skype room.

MrMazda and Uwe, Thanks for getting back to me on this issue.  :urock:  I'd like to clear one thing up for you first.  :pleasant: It's was a suggestion that prompted me to cut the film into smaller sections. Their is a torrent already listed for the whole film but I was made aware that some members may only want the sex scenes.  Plus some members with smaller hard drives may enjoy the smaller file size.

I have no problem offering the whole folder as a complete DVD and for the most part that's what I'm going to do.  This is just an unusual situation and I would like to get the best solution.  I'm no expert when it comes to video editing or formating but I'm a quick learner. Quality is my biggest concern.  I'm wandering what would be the best program for me to use? I am using Power Director v8 now and it's easy to us and the conversion options and not bad,  AVI, MPEG 1, MPEG 2, Mpeg 4, AVC, WMV, RN, and MOV.  Standard setting only.  You cannot customize any of these settings on the outputs. I used the MPEG 1 setting to cut the 25 min. of film and that's where the 1.4 gigs came from. I did have a complain about the quality of the picture and size of the file.  ""1.46 GB ? seriously? for a "clip" that is only 25 ninutes long, not in HD or even wide screen. Im surprised 
Yeah the clip is hot but I can't get over the lack of quality ""  that was made by (djclintonk) I don't want to waist time with junk videos and get comments like this again. The video quality was not HD on my DVD and the copy looks the same as the original so there's nothing I can do about that.
