Fried Rice with Scallions, Edamame and Tofu
Ingredients
* 1 tablespoon plus 1 teaspoon canola oil, divided
* 2 large cloves garlic, minced
* 4 scallions, greens included, rinsed, trimmed and thinly sliced
* 1 tablespoon minced ginger
* 4 cups leftover cooked brown rice
* 3/4 cup finely diced red pepper
* 3/4 cup cooked, shelled edamame
* 1/2 cup fresh or frozen, thawed, corn
* 6 ounces firm tofu, cut into 1/4-inch cubes
* 2 eggs, beaten
* 3 tablespoons low-sodium soy sauceDirections
Heat 1 tablespoon of oil in a wok or large skillet until very hot. Add the garlic, scallions and ginger and cook, stirring, until softened and aromatic, about 2 to 3 minutes. Add the rice, red pepper, edamame, corn and tofu and cook, stirring, until heated through, about 5 minutes. Make a 3-inch well in the center of the rice mixture. Add 1 teaspoon of canola oil, then add the eggs and cook until nearly fully scrambled. Stir the eggs into the rice mixture, then add soy sauce and incorporate thoroughly. Serve hot.
Now, when I made this meal for some of our friends I made my home made egg rolls (I really must try to put the recipe on paper some day) and I cheated and made Knorr- Swiss Hot and Sour soup ( Too easy and no one ever knows it is not home made ) so now all you guys need is to go shopping and call some buddies and eat and enjoy the company of each other.

Directions
Preheat 1 to 2 tablespoons peanut oil in a wok or large pan until rippling. Halve 6 heads baby bok choy lengthwise, keeping the stems and leaves intact, and place in the wok with chopped or sliced garlic and fresh ginger. Stir-fry until fragrant; season with salt.

Tangerine Beef with Scallions
Ingredients
* 1 1/2 pounds beef tri-tip steak, trimmed of excess fat ~ Flank Steak will work also
* 1 tangerine
* 4 scallions, sliced, plus more for garnish
* 1/4 cup soy sauce
* 2 tablespoons toasted sesame oil
* 2 teaspoons sugar
* 2 tablespoons chopped peeled ginger
* 3 cloves garlic, minced
* Pinch of red pepper flakes
* 2 tablespoons orange preservesDirections
Pierce the steak with a fork several times on each side. Remove a 2-inch strip of zest from the tangerine, halve the fruit and squeeze the juice into a resealable plastic bag. Add the zest, scallions, soy sauce, sesame oil, sugar, ginger, garlic, pepper flakes and 1/4 cup water to the bag and mix well. Add the meat, seal the bag and turn to coat. Refrigerate overnight.
Preheat the broiler with a broiler pan in place. Remove the steak from the bag and reserve the marinade. Pat the meat dry and place on the preheated broiler pan. Cook, without turning, until the meat is golden brown and a thermometer inserted in the thickest part registers 130 for medium-rare, about 10 minutes. Let rest 5 to 10 minutes before slicing; reserve the drippings.
Meanwhile, boil the marinade in a small pot over medium-high heat until slightly thickened. Stir in the orange preserves and the drippings from the meat. Slice the meat against the grain and top with scallions. Serve with the sauce.

GOP dismisses military study on gays as biased
WASHINGTON – Some Republicans are dismissing a planned nine-month Pentagon study on gays in the military as biased because it assumes Congress will eventually repeal the 1993 law known as "don't ask, don't tell."
GOP lawmakers are likely to use the argument to try to chip away at the credibility of the assessment, which Defense Secretary Robert Gates envisions as the first comprehensive look at the policy in its 17-year lifetime.
Pentagon General Counsel Jeh Johnson and U.S. Army Forces Europe commander Gen. Carter Ham were expected to testify Wednesday before a House Armed Services subcommittee for the first time since being tapped to lead the study.
"Many of us on this committee have serious concerns with putting our men and women in uniform through such a divisive debate while they are fighting two wars," said Rep. Buck McKeon of California, the full committee's top Republican.
Defense Secretary Robert Gates has said it is probably inevitable that the law will change and ordered a sweeping study to determine how it could be done with minimal impact on the force. As a candidate, President Barack Obama vowed to change the policy but needs Congress' blessing.
Obama also faces a skeptical military. The service chiefs have said they don't want to see the law changed without assurances that the troops' ability to fight will not be hurt. Proponents of the ban often argue that a unit's morale and sense of cohesion could erode if a member were openly gay.
Gates said he thinks attitudes have changed, particularly among the younger generation that comprises the rank and file most frequently thrown into battle. But he has ordered the study to be sure and determine ways to mitigate any backlash among the troops.
In a memorandum concerning the debate released Tuesday, Gates said the review must involve service members and their families at all levels of the armed forces without ensnaring them in a potentially explosive political debate.
"It is critical that this effort be carried out in a professional, thorough and dispassionate manner," Gates wrote.
Congress has been divided on the issue, with some Democrats joining Republicans in their skepticism of lifting the ban.
Other lawmakers want an immediate repeal of the law. On Wednesday, a group of Democrats on the Senate Armed Services Committee, including Chairman Carl Levin of Michigan and Joe Lieberman, a Connecticut independent, planned to introduce legislation that would repeal the law and specifically prohibit discrimination against service members on the basis of sexual orientation.
McKeon is also unhappy with the selection of the RAND Corp. think tank to do much of the legwork for the study. In an e-mail obtained by The Associated Press, a staffer for McKeon told Pentagon officials working on the review that the company had "significant shortcomings" in past work analyzing the issue and partnered with a group advocating repeal last year.
"Given RAND's track record on this issue, there is no way that any study it produces can be called credible or objective," staffer John Chapla wrote.
RAND spokesman Jeffrey Hiday said the company did not work side by side with the pro-repeal group last year.
"A RAND researcher did some work on her own time" for the Palm Center, Hiday said, and is no longer doing so. "RAND has no ideological perspective. We approach every problem by focusing on the facts and analyzing the facts."
Along with military effectiveness, Gates said the panel should address what benefits the military might allow same-sex partners.
Last June, Obama issued a presidential memorandum expanding some federal benefits to gay partners.

Gay rights section nixed for immigrants' guide ~ Canada

Immigration Minister Jason Kenney says his department tried to make an 'inclusive' immigration study guide, but couldn't fit in every government policy and legal decision. (CBC)
Citizenship and Immigration Minister Jason Kenney blocked any reference to gay rights in a new study guide for immigrants applying for Canadian citizenship, the Canadian Press has learned.
Internal documents show an early draft of the guide contained sections noting that homosexuality was decriminalized in 1969; that the Charter of Rights and Freedoms forbids discrimination based on sexual orientation; and that same-sex marriage was legalized nationally in 2005.
But Kenney, who fought same-sex marriage when it was debated in Parliament, ordered those key sections removed when his office sent its comments to the department last June.
Senior department officials duly cut out the material — but made a last-ditch plea with Kenney in early August to have it reinstated.
"Recommend the re-insertion of the text boxes related to … the decriminalization of homosexual sex/recognition of same-sex marriage," says a memorandum to Kenney from deputy minister Neil Yeates.
"Recommend the addition of 'equality rights' under list of rights. Had noted earlier that this bullet should be reinserted into the list as a means of noting the equality of all based on race, gender, sexual orientation etc."
In the end, however, Kenney's view trumped that of the bureaucrats. The 63-page guide, titled Discover Canada: The Rights and Responsibilities of Citizenship, was released with fanfare last November and contains no mention of gay and lesbian rights.
About 500,000 copies were printed and citizenship applicants will start being tested on its contents March 15.
The $400,000 project substantially updated an earlier edition of the guide created in 1995. The new version significantly expands sections on Canada's military past and on aboriginal people, drawing on the views of a panel of prominent Canadians.
The new guide got generally positive reviews when it was launched, though some immediately noted the absence of gay rights, including same-sex marriage.
The publication does include a picture of Olympic gold medal swimmer Mark Tewksbury, however, with a caption saying he is a "prominent activist for gay and lesbian Canadians."
Minister steadfastly opposed same-sex marriageDrafts and other internal documents related to the guide were obtained by The Canadian Press under the Access to Information Act.
"Homosexuality was decriminalized in 1969 and more recently, civil marriage rights to same-sex couples was legalized nationwide in 2005," the earliest draft of the guide says under the section Towards a Modern Canada.
And in the section on citizenship rights, the early draft said: "Equality Rights — Canadians are protected against discrimination based on race, gender, national origin, religion, sexual orientation or age."
Neither sentence survived the minister's red marker.
Kenney has steadfastly opposed same-sex marriage since his time as an opposition MP in the House of Commons.
He spoke against the Civil Marriage Act, or Bill C-38, when it was debated in the Commons in February 2005. And days earlier, Kenney told a session with Toronto-area Punjabi journalists that gays had every right to marry — as long as it wasn't someone of the same sex.
'Choices had to be made about content': Kenney spokesmanHe reaffirmed his stand in 2006 when the newly elected Conservative government attempted without success to revoke the legislation.
And last year, Kenney appointed a longtime Conservative who opposes same-sex marriage to the Immigration and Refugee Board, which among other things makes decisions about whether gays can be given refugee status in Canada.
When the new guide was released Nov. 12, Kenney brushed off a reporter's question about why it lacked any reference to same-sex marriage.
"We can't mention every legal decision, every policy of the government of Canada," he said.
"We try to be inclusive and include a summary. I can tell you that if you were to read the old book, you wouldn't even know that there are gay and lesbian Canadians." He then noted the caption under Tewksbury's photo.
Kenney's spokesman reiterated that the 1995 guide "produced by the Liberals" did not mention gays and lesbians.
"We can endlessly debate what was included or not included," Alykhan Velshi said in an email last week. "Unavoidably, choices had to be made about content because we had to ensure the guide did not become encyclopedic."
Velshi also noted the new guide does not refer to marriage at all, whether opposite sex or same sex.
The gay-rights group Egale Canada met with the minister in early December after learning the booklet made no reference to gay and lesbian rights, and is negotiating with the department to have them included in the next printing, about a year away.
Kenney told the group that gay rights had been "overlooked" when the guide was being prepared, executive director Helen Kennedy said in an interview from Toronto.
"I'm hopeful and optimistic that we're going to get it fixed because we're not happy with it."
Kennedy expressed surprise when told draft versions of the guide did, in fact, contain references to gay rights and that they were ordered removed.
The Canadian Press previously reported that other sections of the draft version of the guide were excised at the suggestion of the panel of prominent Canadians.
The deleted sections included one reference that said Canadian churches ran Indian residential schools, where aboriginal children were abused.
