Taco Salad
Ingredients
1 head lettuce
1 pound of ground beef
2-3 tomatoes
1 package taco flavored shredded cheese
2 red inions
1 can sliced olives
1 bag Taco Flavored Doritos
1 large bottle catalina dressing
1 can kidney beansDirections:
Brown ground beef and set aside
cut up onions, tomatoes, and tear apart lettuce.
Mix/toss in a large bowl, lettuce, tomatoes, onions, cheese, olives kidney beans (drained).
Then add ground beef (beef should not be hot, warm is ok).
Just before serving add almost all the dressing (depending on how big the the head of lettuce was you may need all the dressing).
Smash up Doritos into small size.
Mix all togehter and serve.

This vegetarian "chicken" salad recipe uses mock chicken, available at most health foods stores and larger well-stocked grocery stores to create a satisfying vegetarian chicken salad sandwich. Using vegan mayonnaise will make this vegetarian soy "chicken" salad vegan as well. Serve your vegetarian "chicken" salad on a bed of lettuce, or, serve with lettuce and tomatoes on lightly toasted bread for a vegetarian chicken salad sandwich.
Prep Time: 15 minutes
Total Time: 15 minutes
Ingredients:
1 carrot
1 celery stalk
1 green onion, finely sliced
1 tbsp relish
1/4 tsp dill
1/4 cup mayonnaise (use vegan mayonnaise for a vegan version)
approx 6 oz mock chicken or 10-12 mock chicken deli slicesPreparation:
Using a food processor or a grater, finely dice the carrot and celery.
Slice mock chicken into aproximately 1 cm square pieces.
Combine all ingredients in a large bowl until well mixed.
Serve over lettuce or on bread for a vegetarian "chicken" salad sandwich.
