What are your go-to quick and easy recipes where you're cooking something from scratch? (Or mostly scratch - I don't expect you to make your own pasta, for eg.)

One pot pasta: I boil the cubed meat and the pasta and the broccoli. Drained. Add sauce
        Crockpot beef stew
Stir fry: slice some meat, chop some veggie then stir fry, with or without stir fry noodle
Rib: marinate and then bake the rack

Whenever I feel lazy - marinate the chicken (how you like it - for example: salt, pepper, garlic, herbs, cumin, paprika), slice the chicken, fry it, cook the spaghetti or penne in the meantime, add whatever you want on the fry with the chicken (onion, garlic, paprika, chorizo), add the tomato sauce (passata) and then mix with pasta and decorate with grated cheese (parmesan, grana padano, cheddar or mozzarella) and herbs of your choice or fresh leaves of basil.

Ground pork with vegetables and chipotle, plus white rice.  (Rice can take just 20 minutes and the point to get it right is your rice to water ratio)

Basically some vegetables cooked in a pan with a little of olive oil and some black pepper.
It takes 5 minutes to cook  🙂

An omelet with feta, leafy greens like spinach, celery leaves etc, spring onion, red bell pepper and maybe some bacon.

This is the easiest to make and to clean, just one skillet.
