I found a related post with a reply from a moderator saying "Each torrent is running on it's own schedule and the update interval is 30 minutes. It can be broken by a STOP than a minute later restart of the torrent. The stop should update the tracker."
I should have done a bit more digging around before posting this! Lol.

Hi!
How often does the UL/DL ratio update itself? I’m seeding a file and it says on Vuze that I’ve upload 338MB but it’s only showing up as 251MB on the website for that particular seed. It’s no biggie as I know that my ratio will be updated in time - I was just wondering if there was a time between when this is refreshed?
