Endless variety "salad" (as a meal)

Just returned from up north (Michigan) from a family reunion. One of the days we stayed with my cousin Betty who is in very good health, you would NEVER guess she is 78. So I'm assuming she knows something the rest of us don't about eating…....For lunch today, we had the following:
Shredded cabbage mix (green, red and carrots). You can buy this or make it yourself. The purchased is nice because the shreds are so nice and fine; easy to eat.
Top with any combination of the following:Plain yogurt (low or no fat)
Fruited yogurt (low or no fat - she had blueberry)
Kidney beans, rinsed & drained (these come in regular, no salt and low sodium)
Garbanzo beans (rinsed & drained)
Oil & vinegar dressing
Walnuts
Dried Cherries
Dried Cranberries
Raisins
Small cheese cubes (go easy on these - lots of fat in cheese!)
Yellow or Dijon mustard
Cooked cubed potatoes (just a few please)
Prunes (yes, you'd be surprised how good a couple of these are!)
Sunflower seeds **I'll call her tomorrow and see if I missed anything from her list and feel free to add options here so we can all share! But please limit it to relatively healthy choices! Thanks…..Obviously, for "dieting", use just a few dried cherries, sunflower seeds and the other high calorie things but adding all this makes the cabbage so easy to eat and one gets a great variety. AND you use up leftovers.
****What I did was put about 2 cups of the cabbage in a large bowl, put maybe 2 T of vinegar dressing, mixed it well and then added all the other stuff I wanted on top.
We also had a slice of multi grain bread. This was our whole meal and it was remarkably satisfying.
***Betty buys quite a large bag of the mix and she says while it always lasts a few days longer than the expiration date, after that, the carrots get slimy so before that happens she cooks it and eats it as a side vegetable.
