How often should I wash my bedsheets?

It really depends on the state and quality of the sheets.
For normal use ie no extra body fluids, weekly is more than enough and if you have really good quality (high thread count) sheets you can push it to 14 days but no more.
If you tend to sweat more than average or sleep commando then weekly even for quality sheets.
For any extra body fluids the day after soiling.
Always use a mattress protector which should be washer twice a year and saves ruining your mattress.

I have dust mite allergies so we have to change the sheets twice a week.
The UK says to change your sheets at least once a week, unless you have bodily fluids (including sweat) on your sheets. Sweaty sleepers should change their sheets twice a week.

Makes sense. I'm not that much of a sweaty sleeper, but I do have sensitive skin so I'm thinking twice a week as well

I would start with weekly. You can sometime gets away with 2 weeks in winter but I usually swap my sheet out each Saturday. If you find yourself entertaining frequently, I would recommend that you replace them after each guest.

It needs to be said that you NEED a fully fitted waterproof mattress protector. By "fully fitted" I mean with full sides, not the kind with the jockstrap style straps that loop over each corner. You can also get mattress protectors that fully enclose the mattress that zips up at either the head or foot, depending on how you put it on.
Always have 2 in case something happens and you can't wash the dirty set right away. NEVER use a bare mattress.

If you're living the single life, get at least 2 sets of sheets so you can have one ready in case something happens and you can't wash/dry the other.

For casual sex, always clean sheets.
